The Ultimate Breakkie - Avocado Toast w/Scrambled Eggs

If there's one breakfast dish that I can't get enough of, it's avocado toast. It's my absolute favorite. Topped with scrambled eggs, cheese, red pepper flakes, and a drizzle of olive oil, how do they say? Chef's Kiss. Delicious and nutritious, is the perfect way to start your day off on the right foot.

So, first things first, let's talk about the beauty of the dish. It all starts with avocado, a superfood that is packed with healthy fats, fiber, vitamins, and minerals. It's the perfect ingredient to add to your breakfast because it's filling and will keep you satisfied for hours. Plus, it's incredibly versatile and can be paired with a variety of toppings to create a delicious and nutritious meal.

My approach to this dish begins with choosing the right bread. I like to use a hearty bread that has some texture to it, like whole grain, seeded, or my personal favorite thick sliced sourdough. Toast the bread until it's golden brown and crispy.

While the bread is toasting, it's best to scramble your eggs so they can be ready to add to the toast. Whisk two eggs together in a bowl with a splash of milk, salt, and pepper. Heat a non-stick pan over medium heat and add the eggs to the pan. Cook the eggs, stirring frequently until they are fluffy and cooked through but not overly cooked... ** I'm really picky about my eggs.  

Next, mash half an avocado onto the toast with a fork, add the juice of one small lime, and mix with sea salt, course pepper, onion powder, and garlic powder. This part is very important, be sure to season to your liking. Nothing like bland blah avocado toast... 

Spread the perfectly seasoned avocado spread across your toasted bread. If you'd really like to add additional flavor, butter your toast with a light garlic spread first. Spoon the scrambled eggs on top of the avocado spread and sprinkle some shredded cheese on top. I like to use a white cheddar or pepper jack cheese, but you can use any type of cheese you prefer.

To finish off the dish, sprinkle some red pepper flakes on top of the eggs for a little bit of heat then drizzle some extra virgin olive oil over everything for added flavor and healthy fats.

The result is a delicious and satisfying breakfast that is perfect for brunch, or any time of day really. It's a meal that is packed with healthy ingredients, and it's easy to make at home.
